Great Guana Gourmet

On Monday July 13th Lisa and I, with the help of my bud Corey Burgess, prepared a Six Course Dinner on Great Guana Cay in Abaco Islands of the Bahamas. We have been traveling there for the last couple of years and have made some great friends. We were asked to prepare a dinner for one of our friends, 60th birthday. It was a great challenge as you never know what foods you will find in Abaco. All of the fish is caught by locals and it is strictly, "what's biting". We were in the dark until Monday AM as to what we were actually going to get our hands on. We brought some Kobe Beef, lots of spices, and some oils and vinegars. Otherwise we relied on my great local sourcer Skip, Milo's fruit stand and some odds and end from Price Rite and Guana Grocery(the size of my Living Room). The dinner was a hit and we look forward to going back soon.
Lisa did an amazing job with the place settings, menu's and center piece.
The host was able to bring in some great wines which paired perfectly.
